Caramelisation is a complex chain of reactions that is responsible for the formation of flavour in many products. The delicious flavour of coffee also comes from caramelisation. Coffee beans contain sugars, which are caramelised during roasting, forming many key aroma compounds. In Royal Buisman’s products, these key aroma compounds also occur naturally.
Coffee is one of the most complex flavours. More than 800 different aroma compounds have been identified, but only a small number of compounds are the main contributors to coffee aroma. Furanic compounds such as furaneol, maple furanone and sotolon, as well as aldehydes like 3-methylbutanal, are key to the aroma of coffee. All of these compounds can also be found in natural caramelised sugars from Royal Buisman.
Royal Buisman’s unique process results in a product that is extremely rich in aroma compounds. Sugars are heated at atmospheric pressure and water is released, resulting in a high level of dry matter. This creates favourable conditions for the formation of aroma compounds. The hot mass is then cooled using a cooling plate and ground into a powder. This ensures that the aroma compounds are not lost. This would occur with spray drying technology, which is widely used by other manufactures of caramelised sugar.

You can enrich and balance the flavour profile, boost overall flavour intensity and improve the aftertaste. The Flavour Wheel shows the impact of several of our caramelised sugars on the aroma profile of a standard quality, soluble coffee. The combination of coffee and the dosage of each of type of caramelised sugar determines the final flavour profile.
During the intensive processing when producing soluble coffee, transformations and loss of aroma compounds occur. This disadvantage can be partly overcome by aroma recovery. However, the delicate balance of aroma compounds found in freshly brewed coffee is difficult to achieve. Natural caramelised sugars can restore this balance, ensuring the taste experience of freshly roasted and brewed coffee.
